Snow Fungus Soup for Glowing Skin

Snow fungus, aka Tremella fuciformis, has been used in Chinese medicine for thousands of years for its incredible moisturizing and nourishing properties. The texture is a bit similar to black fungus, a little firm texture with a slight crunch, and completely tasteless, which makes it easy to cook!

I love to enjoy it in this sweet dessert soup with lotus seeds and jujube dates, but you can also just plop it in a smoothie and blend away. You’ll never notice it’s there and still get all the health benefits. Nowadays, snow fungus is even being used in skin care products! But anyways, here’s how to make this soup — enjoy it on a weekly basis as a breakfast.

Instructions:

  • Soak the snow fungus overnight

  • Cut the loose ends into little bite size pieces, and discard the hard back core

  • Wash the lotus seeds and jujube dates before using, then place them into a pot with the snow fungus and sweetener of choice

  • Add about 2 cups of water and bring to a boil

  • Cook for 30 mins and in the last 10 mins, drop in the goji berries

  • Make sure to enjoy WARM so as not to add too much cold into your system!
